Smeg introduces Australia’s first domestic blast chiller

The newly available Dolce Stil Novo Blast Chiller from Smeg is Australia’s first-ever domestic blast chiller, which are traditionally only found in professional kitchens.

The unit, designed by Guido Canali, celebrates the best of form and function and represents the best of Italian design with passion and precision.

With a temperature range from minus 35 to 75 degrees, the multi-function appliance does so much more than chilling and freezing. It has been put to the test by chefs and avid home entertainers alike to produce healthier, higher-quality food; reduce food waste and maintain food safety. The functions include:

- Deep freezing. Reaching minus 35 degrees in just 270 minutes, without altering the structure of food while maintaining colour, texture, flavor and nutritional value, meaning you can preserve bulk buy purchases, batch cook make ahead meals and enjoy seasonal fruit and vegetables all year round.

- Blast chilling. Avoid the temperature danger zone and achieve optimum food safety by rapidly cooling hot cooked food to three degrees in under 90 minutes. Blast chilled food can be stored without loss of taste, appearance and nutrition.

- Low temperature cooking. Food is cooked at a low, constant temperature (75 degrees) with excellent results – meat is more tender and juicy and retains its colour and texture all the way through.

- Delay start/ready to eat. For the active, busy and on the go user food can be stored at fridge temperature until ready to be reheated. Meals can be pre-programmed to be ready to eat at dinnertime without risk of bacteria contamination.

- Temperature holding. Food safety is guaranteed as once a cold or hot function concludes, a pre-set temperature will maintain food stability.
