Different speed sets

Ventilation & Pulse function

With YesOvens combi-ovens, it is possible to cook using different speed sets.

In touch ovens, up to 7 options are available + the PULSE function.

In digital ovens, up to 3 options are available + the PULSE function.

The PULSE speed recreates a semi-static cooking environment: it is ideal for soft and delicate cooking as well as long time cooking that shall not be exposed to a strong ventilated airflow.

How it works?

Within PULSE mode, the ventilation works only when the heating elements are active.

Once the set temperature is reached, the ventilation is deactivated.

Ventilation will only restart for a few seconds when the oven goes below the set temperature point.

This mode, which can also be activated during the recipe, is available in all of our Touch and Digital models of the Ho.Re.Ca., Arte Bianca and Special lines.

Soft Baking

This is our reduced ventilation speed cooking mode, ideal for long time cooking as well as Bakery and Pastry.

You can find this mode in both of our electro-mechanical combi-oven models: Mosaico (Ho.Re.Ca. line) and Karma (Arte Bianca line).
